Beer

In 2002, China overtook the United States and became the world's largest beer producer. In 2020, there was a minimum production level for 2017-2021 (34.11 million tons), due to the impact of the COVID-19 pandemic.

Beer is one of the oldest and most widely consumed alcoholic drinks in the world, and the third most popular drink overall after water and tea. It is made from the fermentation of starches, primarily derived from cereal grains like barley, though other grains and ingredients can also be used. The basic ingredients of beer are water, a starch source (such as malted barley), hops, and yeast.

Water: The quality and characteristics of the water used in brewing can greatly affect the flavor of the beer.
Starch Source (usually malted barley): The starch source in beer is typically malted barley, though other malted or unmalted grains like wheat, corn, or rice can also be used. Malted barley is barley that has been soaked in water to germinate and then dried in a kiln. Malting grains develop the enzymes necessary for modifying the grain's starches into sugars.
Hops: Hops are the flowers (or seed cones) of the hop plant, Humulus lupulus. They are used primarily as a bittering, flavoring, and stability agent in beer. In addition to bitterness, they impart floral, fruity, or citrus flavors and aromas. Hops also have an antibiotic effect that favors the activity of brewer's yeast over less desirable microorganisms.
Yeast: Yeast is a microorganism that is responsible for fermentation in beer. Yeast metabolizes the sugars extracted from grains, which produces alcohol and carbon dioxide, and thereby turns the wort into beer. There are many strains of yeast and each contributes to the character and flavor of the beer.

The brewing process involves combining the malted barley with water to create a mash, which is then heated. This process activates the enzymes in the malt, which convert the starches in the grain into fermentable sugars. The mash is then boiled and hops are added for flavor and bitterness. After boiling, the liquid is cooled, yeast is added, and the fermentation process begins. Once fermentation is complete, the beer may be conditioned in tanks, or it may be further matured in bottles or kegs to develop its flavors.

There are various styles of beer, including lagers, ales, stouts, porters, and many others, each with distinct characteristics and flavor profiles.
